CHILI WITH BEANS

1 pkg (small) red beans
2-4 lbs ground beef
2 onions (med) finely chopped
1/8 tsp nutmeg
16 oz tomato sauce
5 allspice, whole
1/2 tsp red pepper
1 tsp ground cumin
4 tbsp chili powder
4 cloves garlic -- sliced thin
4 tbsp vinegar
1 bay leaf, whole
5 cloves, whole
2 tsp Worchestershire sauce
2 tbsp cocoa
1 1/2 tbsp salt
1 tbsp sugar
1 tsp paprika
2 tbsp flour
1 green bell pepper, finely chopped


Soak the red beans overnight; cook in the water until done. Set aside. Add the beef to 1 qt water and boil slowly for 1/2 hour. Add seasonings, bled, and bring to a boil. Reduce to low; simmer for 3 hours. Afther the desired consistency is reached - cover the pot. Skim excess fat off during cooking. Add chili mixture to beans and simmer for 1/2 hours. Add more salt if necessary. Add the beef mixture to the bean mix and simmer until it reaches the taste you want. (Could be several hours).
