COMPANY CARROTS

2 pounds carrots, sliced into narrow strips

Cook in boiling water, salted, until tender.
Save 1/4 cup liquid

Arrange carrots in shallow baking dish. Combine

1/4 cup liquid
1/2 cup mayonnaise
1 to 3 tablespoon (tbsp) horseradish
1 tablespoon (tbsp) instant minced onions (your option)
Salt & pepper to taste

just before serving dinner, pour sauce over the carrots and bake uncovered at 375 degrees for 15 to 20 minutes.

Note: Carrots and sauce can be prepared ahead of time but DO NOT mix until ready to bake and serve.
