Banana Muffins

From the kitchen of: JOAN THOMPSON Serves/Yields: 12 MUFFINS

Ingredients:

2 cups flour
1/2 cup sugar
2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/2 tsp cinnamon
1/4 tsp nutmeg
1/2 cup ripe mashed banana
1/2 cup milk
1/3 cup vegetable oil
1 egg, room temp
1/4 cup chopped nuts, opt
cinnamon and sugar for topping, opt

How to make:

PREHEAT oven to 375 degrees
GREASE 12 muffin cups

In a food processor, mix all dry ingredients. Put in a large mixing bowl. Stir in nuts if using.

In food processor, mix bananas, milk and oil until smooth. Add egg and pulse until mixed. Add to dry ingredients and hand mix gently about 20 strokes. Some lumps may remain.

Fill muffin tins 2/3 full and sprinkle with cinnamon/sugar mixture if desired.
BAKE 15-20 min. Cool muffins in the pan 5 min before removing from tin.

A long time family favorite. It's a great use of over ripe bananas
