Cherry Pie

4 cups Fresh or Frozen tart cherries
1 cup sugar
4 tbsp cornstarch
1/8 to 1/4 tsp almond extract
1 to 2 tbsp butter
1 tbsp sugar

Mix sugar, cornstarch and add to cherries. Let sit for 15 to 20 minutes, this lets the juices flow. Heat cherry mixture till boiling gently until thickens. turn off heat and add almond extract. Let cool. Pour into pie shell, dot with butter. Weave lattice crust on top and sprinkle with sugar. Bake at 375 degrees for 45 to 50 minutes.
