Crunchy Oven-Fried Chicken

1/4 cup margarine or butter
5 cups cornflakes
1/4 tsp pepper
1 tsp salt
2 tsp paprika
3 and 1/2 pounds broiler-fryer chicken, cut-up

Heat oven to 375 degrees. Melt margarine or butter in jelly-roll pan, 15 1/2 x 10 1/2 inches, in oven.

Place cornflakes, paprika, salt and pepper in blender. Cover and blend on medium speed until mixture is fine crumbs. Dip chicken into melted margarine, then coat evenly with cornflake mixture. Place chicken, skin sides up, in pan.

Bake uncovered 45 to 60 minutes or until juice is no longer pink when center of thickest pieces are cut.
