Ernie's Fish Marinade

1 package Black pepper-corn sauce
1/3 cup olive oil
1/8 cup water
2 tbsp vinegar
? garlic cloves, finely chopped
brown sugar

Mix the four ingredients together really good to make a sauce. Get garlic cloves and chop up into very small pieces. Next lay fish fillets out on untreated (plain cedar) 1 by 6 inch board or cedar shake (about the length to fit in gas barbeque). Make sure the cedar board is soaked good in water. So you've got fish fillet layed out on this wet cedar board, skin down. Next, cut fillet length of fillet through to skin, open it up and lay your chopped garlic into meat fillets. Then sprinkle some of the chopped garlic into meat fillets. Then sprinkle some of chopped garlic on top of fillet.

Next, baste, using brush, spread your sauce all over top of fillets till used up. Then let this marinade in refrigerate overnight. Before putting in Barbeque sprinkle nice layer of brown sugar over top of fillets, about 1/16 of an inch thick. Let cook in gas Barbeque for half an hour to 45 minutes. Keep Barbeque closed, it will really smoke, but let it smoke to beat hell!
