Grated Zucchini patties

5 medium zucchini
1 tbsp grated parmesan
2 tbsp flour
1 tsp salt
1/2 cup olive or vegetable oil
3 eggs, slighly beaten
1 clove garlic, minced
1/2 cup chopped parsley
1 tsp pepper

Remove both ends of zucchini, do not peel. Press out water, after grating, medium to coarsely. Combine all ingredients, mixing with fok. Heat a small amount of oil in skillet, dropping a heaping tablespoon of the mix at a time, to fry until golden brown. Serve warm.

Serves 8 as a side dish.
