Grilled Salmon Fillet

Basting sauce

1/4 cup soy sauce
1/4 cup lemon juice
3 tbsp brown sugar, packed
1 and 1/2 tbsp vegetable oil
1 clove garlic, peeled and crushed
3 and 1/2 to 4 pounds salmon fillet, skin on

Combine the above ingredients, stir to mix.
Place salmon skin side down on 2 layers of heavy duty foil.
Baste fish with soy mixture while preparing the fire.
Prepare grill at level to be cool enough to hold your hand over coals for 13 to 14 seconds before heat becomes uncomfortable.
If coals are too hot, bank them against sides of grate.
Baste fish again and & place foil & fish on grill rack.
Cover grill with lid and open vents.
Cook for about 30 minutes, basting occasionally until fish is opaque when tested at it's thickest part.

This is an Indian inspired slow cooking method.

Serves 8 to 10.
