Imitation Pecan Pie

1 and 1/2 cup sugar
3 eggs
3/4 cup mashed pinto beans
1/3 cup melted butter or margarine
2 tsp vanilla
1 cup pecans or walnuts (OPTIONAL)

Cook beans until well done. Mash, reheat and measure. Beat eggs, blended with beans.

Add remaining ingredients. Pour into 9 inch unbaked pie shell. Bake 40 minutes at 350 degrees. If you like, you may put a cup of chopped pecans or walnuts on top.
