Joann's Carrot Cake

Beat:   1 and 1/2 cup oil
3 cups grated carrot
4 eggs
2 tsp vanilla
add:2 cups sugar
2 cups flower
2 tsp baking powder
2 tsp soda
2 tsp cinnamon
1 tsp salt
1/2 to 1 cup nuts


Grease a 9 by 13 inch pan. Bake at 350 degrees for 40 to 50 minutes.

Frosting

1/2 cup margarine
8 ounce cream cheese
1 tsp vanilla
1 pound powdered sugar, maybe a litte more


Beat together. I usually store this in refrigerater until ready to serve. I find this is more than I need for this cake. Can be used on lots of other things.
