Lemon Chicken in Lemon Glaze

2 to 6 Chicken Breasts, skinless and boneless
1 and 1/2 flour in a zip plastic bag with sage, pepper, paprika etc. Added to bag.
2 tbsp Olive Oil
2 tbsp Butter
1 cup of Chicken Broth
Zest and Juice of one lemon
2 tbsp Corn Starch
One Lemon Sliced
Capers

   Pound chicken breast in Costco wrapping (or plastic bag), with the small side of mallet. Wash each piece of chicken, then drop into flour bag to coat.
   In a heavy skillet, brown chicken in oil and butter on each side until golden brown. Add the chicken stock, the juice of one lemon, and sprinkle 1/2 of the Zest on the chicken as it is simmering. When the juice runs clear, remove the chicken and keep warm.
   Mix cornstarch with a little cold stock, and the add to broth, stirring constantly until well mixed. Simmer, stirring until the sauce if thick. Add lemon slices, zest, and cappers to warm.
   Arrange the chicken breast on a platter or the plate. Arrange lemon slices and sauce on each breast.

This can be made with oranges instead of lemon.
