Manicotti

6 oz jumbo manicotti shells
1 lb ground beef
1 small onion, chopped fine
1 clove garlic, minced
1 green pepper, chopped
2 cans tomato sauce with bits
1 (8 oz) can plain tomato sauce
1/8 tsp pepper
1 package mozzarella cheese
parmesan cheese
1 tsp salt
1/4 tsp basil leaves

Brown beef and remove meat with slotted spoon. In drippings, saute onion, garlic and green pepper until crisp tender. Drain off fat. Mix vegetable, beef and 1/2 cup tomato sauce, 1 teaspoon salt, oregano, basil, pepper, and 1/4 cup mozzarella cheese.
Mix in dish, not in hot pan.
Fill shells with meat mixture. Pour 1/2 cup sauce over bottom of 12 inch by 8 inch baking dish. Arrange stuffed shells in it. Pour remainder of sauce of top. Sprinkle gererously with parmesan cheese. Bake covered with foil at 375 degrees or until bubbling hot, approx. one hour.
