Mozzarella Marinara

Marinara Sauce

1/4 cup olive oil
4 minced clove garlic
1 Tbsp minced parsley
1/2 tsp dried basil
2 cups chopped, peeled or canned tomatoes
3/4 tsp salt
1/8 tsp pepper

Heat oil in frying pan.
Add and cook til soft garlic, parsley and basil
Add rest and simmer for 30 minutes.
can double, may need more salt

1 pound mozzarella cheese
1 beaten egg
3 Tbsp flour
1/2 to 1 cup crushed italian seasoned bread crumbs
1 Tbsp grated parmesan cheese
oil for frying
Cut cheese into 3 by 2 by 1/2 inch pieces
Dip each piece into egg, then flour, then egg
then into bread crumbs with parmesan cheese mixture
Chill for 30 minutes
Fry in 1/2 inch hot oil until well browned.
Drain on paper towels. Serve with marinara Sauce.
