Pioneer Macaroni and Cheese

Pioneer Macaroni and Cheese Baked by Steve McNair and displayed on his deck...

Pioneer Macaroni and Cheese

4 cups hot drained boiled Macaroni (8 oz. uncooked)
2 tbsp butter
1 and 1/4 cups cut-up sharp cheese (1/2 inch cubes)
1 tsp salt
2 eggs, beaten
3 cups milk
paprika

Place Macaroni, butter, cheese, salt and pepper in alternating layers in buttered 11-inch by 7-inch oblong baking dish. Combine eggs and milk; pour eggs and milk over Macaroni. Sprinkle with paprika.

Bake at 350 degrees for 40 to 50 minutes (I [Steve] bake it for 30 minutes) or until golden brown on top. Serve hot from baking dish garnished with parsley sprigs, pimiento strips, pepper rings, etc. if desired.

When Steve & Carol McNair's son left home, this is the only recipe he asked for.

Makes 6 to 8 servings.

Mac and cheese is an all American classic comfort food! A great dish for the freezer as well.
