Quick Tamale Pie

1 cup cornmeal
1 cup cold water
1 cup boiling water
1 teaspoon salt
1 lb lean ground beef
1 medium onion, chopped
1 can chili con carne-no beans (15 oz)
1 can (2 1/4oz) chopped olives
1 can corn or can use frozen corn (15 oz)
1 cup grated cheese

Mix cornmeal with cold water; add boiling water and salt and cook over low heat until thickened (about 10 minutes), stirring occasionally. Brown ground beef and onions in heavy frying pan, drain excess fat. Stir in chili con carne and corn. Mix olives with the cooked cornmeal, use 2/3 of the mixture to line the bottom of a greased 9 X 9 X 2 inch baking pan. Pour in meat mixture and spread evenly over top of cornmeal. Cover with remaining cornmeal. Sprinkle grated cheese over top. Bake in moderate oven (350 degrees) for 25 to 35 minutes. For glass baking dish, reduce oven temperature to 325 degrees.
