Salmon Manicotti

4 ounce smoked salmon, broken up
1 cup cottage cheese
1 egg
1/4 cup finely minced onion
5 ounce chopped spinach
1/4 tsp dill

10 Manicotti Shells (cooked 15 minutes)

Mix salmon, cottage cheese, egg, onion, spinach, and dill (Sharon McDonnell uses her mixer, it just does a better job).

Sauce

2 tbsp butter
2 tbsp flour
1/2 cup chicken broth
1/2 cup milk
1/2 cup shredded jack cheese
1/2 cup shredded cheddar cheese

Cook shells, drain, rinse with cold water, place individually on waxed paper.
Melt butter in microwave.
Stir in flour with wire whisk; add liquid and stir.
Microwave for 3 minutes and stir; repeat until sauce is ALMOST thick.
Add cheeses and stir until pretty much melted.

Cover the bottom of a casserole dish with sauce (about 1/2 cup).
Fill manicotti with salmon mixture (I [Sharon McDonnell] use a pastry tube without any tip).
Place filled manicotti on top of sauce (one layer, please).
Cover with remaining sauce.
Cover and bake at 450 degrees for 15 minutes, uncover and bake 10 more minutes or unitl top is lightly browned.
