Spinach and Bacon Salad

2 lbs fresh spinach
1/2 lb bacon
1 tsp salt
1 tsp dry mustard
1/3 cup cider vinegar
1 tbsp poppy seed
2 heads red leaf lettuce
1/4 cup sugar
1 tbsp juice scraped from onion
1 cup salad oil
1 and 1/2 cup large curd cottage cheese

Thoroughly wash and drain spinach. Remove stems and tear into bite-sized pieces. combine with broken lettuce. Fry bacon 'til crisp. Cool and crumble, then add to greens.

Dressing:

Shake together sugar, salt, oil, onion juice, mustard and vinegar. Add poppy seeds and shake again. Toss salad with half of dressing. Add cottage cheese to remaining dressing. Shake and toss with greens. (I usually don't need all the dressing on the one salad.)
