Sweet Potato Stir-Fry

1 medium sweet potato
1 medium onion, preferably red
2 cloves fresh chopped garlic
1 cup broccoli
1 cup chopped carrots
1 cup baby spinach, fresh
1 Tbsp virgin coconut oil

Fry potato, onion, garlic, carrots on medium heat, covered.
Add spinach, broccoli, seasonings of your choice.
Stir occasionally untill all is medium cooked, not soggy soft. Is better for you that way with the vitamins.
Of course you may add other veggies, fresh prefered.
Some times I add baked chicken or pork loin. Cooked separate.
A great healthy filling meal. Great for leftovers as well.

Just a simple one I know. But my favorite.
