Sweet Potato Souffle

1 large can of sweet potatoes or 2 large fresh sweet potatoes
1 cup sugar
1/2 t salt
2 eggs
1/3 stick of butter
1 small can evaporated milk
1 t vanilla

Topping

1/2 stick of butter
1/3 cup all purpose flour
1/2 cup bread crumbs
1 cup light brown sugar
1 cup chopped pecans
1/2 cup coconut

Mash potatoes and mix all ingredients together well,spread evenly in a greased 9 X 12 dish.

Topping-melt butter, add brown sugar and rest of ingredients. Spread over top of potato mixture, bake @350 degrees for 35 minutes.
