Tempura Battered Shrimp and Vegetables

1 egg
1 and 1/2 iced water
2 cups sifted flour
1 zucchini
1 sweet potato or yam
1 bell pepper
1 pound large or medium shrimp peeled & deveined

Beat egg, blend in water (with ice cubes added). Sift the flour evenly over the top of the liquid. Blend with a wire whip until most of the lumps are out.

Slice zucchini and sweet potato into 1/4 inch slices and bell pepper into 2 inch strips. Heat 2 inches oil in skillet or deep fryer to 375 degrees. Cook 4-5 pieces at a time for about 2 minutes until golden brown in the hot oil.
