Thumb Print Cookies

1/2 cup butterBeat until creamy.
1/2 cup brown sugar   
 
1 eggAdd to butter mixture and beat until creamy.
1/2 tsp vanilla
2 tsp cinnamon
 
1 cup sifted flourAdd to butter-egg mixture and stir until blended.
1/2 tsp salt


Chill dough for 1 hour after rolling it into a ball. Pinch off 1 inch sized pieces and roll into small balls. Roll balls in a beaten egg white, then in sugar or chopped nuts. Bake in 375 degrees oven for 5 minutes. Remove and depress the center of each cookie with your thumb (may be HOT), then return to the oven and bake 8 to 10 minutes more. Cool and fill the depression with jam (raspberry, strawberry or apricot are especially good), or chocolate chips. Makes 3 and 1/2 dozen.
