Vanishing Oatmeal Raisin Cookies

1 cup butter, softened
1 cup firmly packed brown sugar
1/2 cup granulated sugar
2 eggs
1 tsp vanilla
1 and 1/2 cups all-purpose flour
1 tsp baking soda
1 tsp cinnamon
1/2 tsp salt
3 cups quick or old fashioned oatmeal, uncooked
1 cup raisins (I use 12 oz. pkg SunMaid Mixed Jumbo Raisins)

  1. Heat oven to 350 degrees.
  2. Beat together butter & sugars until creamy.
  3. Add eggs and vanilla, beat well.
  4. Add flour, baking soda, cinnamon & salt; mix well.
  5. Stir in oats and raisins, mix well.
  6. Drop by ice cream scoop onto cookie sheet.
  7. Bake 10 to 12 minutes or until golden brown.
  8. Cool 1 minute on cookie sheet, remove to wire rack.
